Summer Berry Overnight Oats

Overnight oats are one of my absolute favorite breakfasts! It only takes about 5 minutes to throw together at night and then you have a delicious and healthy breakfast with no work in the morning. It’s a perfect grab and go option for those busy mornings when you don’t have time to think about breakfast.

Overnight oats are very versatile, so you can modify the recipe to whatever you like! Almost any topping works on this, so feel free to switch out the berries for another fruit or something. If you really want to get crazy, nix the cinnamon and throw in about ½ -1 tbsp of cacao for chocolatey overnight oats!

Ingredients:

⅓ cup rolled oats (GF if necessary)

1 tbsp chia seeds

1 banana, mashed

⅔ cup unsweetened almond milk

Dash of cinnamon

2-3 strawberries, sliced

Handful of blueberries

1 tbsp almond butter

Steps:

  1. In a jar or bowl, mix together the mashed banana, oats, chia seeds, cinnamon, and almond milk. Refrigerate overnight.

  2. In the morning, top with sliced strawberries, blueberries, and almond butter. Enjoy!
