Lemon Power Snacks

With the start of the new school year, I thought it would be a great time to share my lemon power snack recipe! I feel like lemon power snack is kind of a silly name, but I just love it for some reason. I couldn’t think of anything else because power snack perfectly describes them. They are chock full of nutrients and loaded with a good mix of carbs, protein, healthy fats, and fiber to keep you full and satisfied – perfect for getting through long days of classes and late nights in the library. This recipe is simple to make, easy to fit into a busy schedule, and just so delish.

Ingredients:

6 medjool dates

¼ cup raw cashews

½ cup unsweetened shredded coconut, divided

⅓ cup pecan pieces

½ tsp vanilla extract

Juice and zest of ½ lemon

Steps:

  1. Combine all ingredients except ¼ cup of the shredded coconut in a food processor. Process until everything comes together and the nuts are in very small pieces. Don’t go too crazy though or you’ll end up with a nut butter.

  2. Roll chunks of the mixture into 1” balls and coat with the remaining ¼ cup of coconut.

  3. Enjoy immediately and store extras at room temp or in the fridge.
