BBQ Jackfruit Sandwiches (gf + vegan)

Looking for a meatless BBQ option? Look no further! Jackfruit is about to solve all of you veggie BBQ problems. I first tried jackfruit at Smorgasburg, which is a food truck market that pops up in Brooklyn and a couple other places every weekend. I was totally in shock that a fruit could taste so much like BBQ pulled pork. If you’ve never heard of jackfruit, the only way I know how to describe it is a fruit that tastes like pulled pork when it is cooked and seasoned. I know, sounds too good to be true.

For a while, I had the hardest time trying to find jackfruit in the grocery store. Finally a store near me started carrying canned jackfruit in the Asian cooking section. Jackfruit is starting to become more popular and well-known, so hopefully more stores will start carrying it!

A note on the BBQ sauce – I wasn’t adventurous enough to make my own, but feel free to do that! I prefer a BBQ sauce that doesn’t have a lot of refined sugar in it (which most do). With this qualification, a good store-bough BBQ sauce isn’t too easy to find.  However, I discovered one brand called True Made Foods that I love. They make a bunch of different sauces and my favorite is the vegetable BBQ sauce because it tastes great and I’m all about sneaking in extra veggies when I can.

Ingredients:

1 white onion

2 tbsp olive oil

1 can plain jackfruit

½ cup + more to taste BBQ sauce

Salt and pepper, to taste

5 gluten free rolls (or regular if you’re about that gluten life)

1 ½ cups shredded cabbage

Steps:

  1. Dice the onion and sauté in the olive oil until translucent and slightly browned.

  2. Drain the jackfruit and add to the pan with the onion. Use your spatula to break it up and mix it in.

  3. Add the BBQ sauce to the jackfruit and onions. Sauté until everything is hot and mixed together well.

  4. Toast your rolls and assemble with the jackfruit and shredded cabbage like in the pictures. Enjoy!
