BBQ Jackfruit Sandwiches (gf + vegan)
Looking for a meatless BBQ option? Look no further! Jackfruit is about to solve all of you veggie BBQ problems. I first tried jackfruit at Smorgasburg, which is a food truck market that pops up in Brooklyn and a couple other places every weekend. I was totally in shock that a fruit could taste so much like BBQ pulled pork. If you’ve never heard of jackfruit, the only way I know how to describe it is a fruit that tastes like pulled pork when it is cooked and seasoned. I know, sounds too good to be true.For a while, I had the hardest time trying to find jackfruit in the grocery store. Finally a store near me started carrying canned jackfruit in the Asian cooking section. Jackfruit is starting to become more popular and well-known, so hopefully more stores will start carrying it!A note on the BBQ sauce – I wasn’t adventurous enough to make my own, but feel free to do that! I prefer a BBQ sauce that doesn’t have a lot of refined sugar in it (which most do). With this qualification, a good store-bough BBQ sauce isn’t too easy to find. However, I discovered one brand called True Made Foods that I love. They make a bunch of different sauces and my favorite is the vegetable BBQ sauce because it tastes great and I’m all about sneaking in extra veggies when I can.Ingredients:1 white onion2 tbsp olive oil1 can plain jackfruit½ cup + more to taste BBQ sauceSalt and pepper, to taste5 gluten free rolls (or regular if you’re about that gluten life)1 ½ cups shredded cabbageSteps:
- Dice the onion and sauté in the olive oil until translucent and slightly browned.
- Drain the jackfruit and add to the pan with the onion. Use your spatula to break it up and mix it in.
- Add the BBQ sauce to the jackfruit and onions. Sauté until everything is hot and mixed together well.
- Toast your rolls and assemble with the jackfruit and shredded cabbage like in the pictures. Enjoy!
